Pumpkin Pie Mix-up

  • 1 (29 oz.) can pumpkin
  • 1 ½ cups sugar
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 1 teaspoon ground ginger
  • ½ teaspoon ground cloves
  • 4 large eggs
  • 1 (12 oz.) can evaporated milk
  • 1 box yellow cake mix
  • 1 cup chopped nuts
  • 1 cup butter, melted
    1. Combine sugar, salt, cinnamon, ginger and cloves in small bowl.
    2. Beat eggs lightly in a large bowl.
    3. Stir in pumpkin and sugar-spice mixture.
    4. Gradually stir in evaporated milk.
    5. Spray 9 x 13 inch cake pan with cooking spray.
    6. Pour in pumpkin mixture.
    7. Sprinkle dry cake mix evenly over pie mix.
    8. Sprinkle nuts evenly over cake.
    9. Using a tablespoon, spoon melted butter evenly over cake.
    10. Bake at 325 degrees for 75 to 90 minutes (until knife comes out clean).
    11. Keep refrigerated if not serving soon. Enjoy!
