Sunshine Cake

  • 1 1/2 cups sugar
  • 1/2 cup water
  • 6 eggs, separated
  • 1/4 teaspoon salt
  • 1 cup flour
  • 3/4 teaspoon cream of tartar
  • 1 teaspoon orange extract
  •  

    1. Boil sugar and water till it threads when dropped from spoon.
    2. Beat egg whites together with salt.
    3. Pour cooked syrup in a fine stream onto the egg whites. Beat until cool.
    4. Add well-beaten egg yolks. Beat mixture together.
    5. In a separate bowl, sift flour with cream of tartar.
    6. Fold very carefully into the egg mixture. Stir in orange extract.
    7. Pour batter into an ungreased Angel Food cake pan.
    8. Bake at 325 degrees for 50-60 minutes.
    9. Cool, turn onto a cake plate, and enjoy!
