Peanut Ice Cream Pie – From Virginia’s Kitchen

Dear Friend, 

This yummy dessert is a cinch to make, and it will bring raves at any get-together this summer. Make it ahead of time and pull it out of the freezer whenever you neet it. Bon appetit! 

Peanut Ice Cream Pie


3 oz. semisweet chocolate

1 ½ tablespoons butter

1 cup Rice Krispies ® cereal

½ cup salted peanuts, chopped

1 quart coffee ice cream

1 12 oz. container whipped cream



Melt chocolate and butter over low to medium heat. Stir in cereal and chopped peanuts. Mix well. Press mixture into buttered 8-inch pie plate and chill until set.

Take ice cream out of the freezer and let it soften slightly. Spoon it into the pie shell and spread it to form an even layer. Sprinkle with extra shaved chocolate and chopped peanuts if desired.

Freeze until firm and top with whipped cream when you’re ready to serve!
