Burnt Sugar Cake

Ingredients:

2¼ cups sugar
¾ cup boiling water
1¼ cup butter, divided
2 eggs, separated
1 cup cold water
3 cups flour
½ teaspoon salt
1 teaspoon baking soda
½ teaspoon baking powder
2 cups powdered sugar
1 Tablespoon milk

Directions:

Preheat oven to 350 degrees.

Put ¾ cup sugar in saucepan and heat gently until it turns dark brown in color. Add the boiling water, remove from heat and cool. Cream 2/3 cup butter and the remaining sugar together. Beat 2 egg yolks and add them.

Take the burnt sugar you’ve made, set aside 2 Tablespoons to make the frosting later, then add the cold water to the remaining burnt sugar. Add the flour, salt, baking soda, and baking powder. Fold in 2 stiffly beaten egg whites.

Pour mixture into 2 greased and floured cake pans. Bake at 350 for 30 minutes.

Frosting:
Mix two cups powdered sugar, ½ cup butter, 1 Tablespoon milk and 2 Tablespoons burnt sugar together until creamy, then ice the cooled cake and enjoy!
